Native American Day

A legacy from the Native American people is sugaring. They showed colonists how to cut Vs into the maple bark to capture and then concentrate the sap (also called mape water).  Maple syrup and sugar  were treated as a commodity in the early days.  As sweeteners were had to come by in the Northern USA.  It takes 40-50 gallons of sap to produce 1 gallion of maple syrup.   It is graded by how much light can pass through it.  The lighter the color the finer, more delicate the flavor.  The sap is processed down to approx 66% sugar.  The taps in the trees are placed in 2 inches, and are 5/8  diameter.
